I prized open the stopper and my expectation of delight began with a resounding pop.
The anticipation was not unfounded. The taste was sweet and subtle and real – The flavor of real apple grown from the earth, sucking in sunshine to swell and ripened, real cider fermented to alcohol.
And the alcohol coming through quite true, I’d guess close to 5%.
So satisfying to know that a few ingredients treated with respect can simply develop into a rich complexity without the need for additives or preservatives.
A chemical transformation - not alchemy but life - an organic culture developed in a bottle for my pleasure.
